🍲 Creamy Tuscan Zucchini Soup

Ingredients
- 500 g Zucchini
- 1 Stk Onion
- 2 Stk Garlic cloves
- 200 ml Coconut milk
- 500 ml Vegetable broth
- 2 EL Olive oil
- 10 Blätter Basil
- 1 Stk Lemon
Instructions
- 1. Wash the zucchini and cut them into large cubes.
- 2. Finely chop the onion and garlic.
- 3. Heat the olive oil in a large pot and sauté the onion and garlic for 3 minutes.
- 4. Add the zucchini cubes and sauté for 5 minutes.
- 5. Pour in the vegetable broth and coconut milk.
- 6. Let the soup simmer for 15 minutes until the zucchini is tender.
- 7. Blend the soup until smooth with an immersion blender.
- 8. Season with salt, pepper, and the juice of half a lemon.
- 9. Serve the soup hot garnished with fresh basil.
