🥣 Warm Vichyssoise Potato Leek Soup with Bacon

Ingredients
- 300 g Leek (white part only)
- 400 g Potatoes
- 30 g Butter
- 100 g Bacon cubes
- 800 ml Chicken broth
- 150 ml Heavy cream
- 5 g Salt
- 2 g Pepper
Instructions
- 1. Thoroughly rinse the leek under running water and slice it into thin rings.
- 2. Peel the potatoes and cut them into small cubes.
- 3. Fry the bacon in a large pot over medium heat until crispy.
- 4. Add the butter to the pot and sauté the leek for 5 minutes until soft.
- 5. Add the potato cubes and fry them for 2 minutes with the mixture.
- 6. Deglaze everything with the chicken broth and bring to a boil.
- 7. Reduce the heat, cover the pot, and simmer the soup for 20 minutes until the potatoes are tender.
- 8. Puree the soup until smooth using a hand blender.
- 9. Stir in the cream and season with salt and pepper.
- 10. Serve the soup in deep bowls topped with the crispy bacon.
