🍝 Creamy Tomato Penne Primavera with Basil

Ingredients
- 320 g Penne pasta
- 400 g Cherry tomatoes
- 80 g Hard cheese (like Parmesan) grated
- 150 ml Heavy cream
- 3 Zehen Garlic
- 1 Handvoll Fresh basil
- 2 Esslöffel Olive oil
- 1 Teelöffel Salt
- 0.5 Teelöffel Black pepper
Instructions
- 1. Boil water in a large pot with salt. Add the penne and cook al dente (still firm to the bite).
- 2. Drain the water but reserve 100 ml of the pasta water. Set the pasta aside.
- 3. Heat the olive oil in the same pan over medium heat. Add the chopped cherry tomatoes and minced garlic.
- 4. Cook the tomatoes for 5 minutes until soft and slightly breaking down. Mash them lightly with a spoon.
- 5. Stir in the cream and grated cheese into the tomatoes. Let the sauce simmer for 2 minutes.
- 6. Return the pasta and 50 ml of the reserved pasta water to the pan. Mix everything well until a creamy sauce forms.
- 7. Season with salt and pepper. Chop the basil and stir it in. Serve the dish warm.
