  1. 1. Preheat the oven to 180 degrees Celsius. Grease a baking dish with the butter.
  2. 2. Peel the potatoes and slice them into paper-thin rounds (about 2 mm). Rinse off the starch with cold water and pat dry.
  3. 3. Wash the spring onions, slice them into thin rings, and separate the white bases from the green tips.
  4. 4. Mix the sour cream, herb cream cheese, salt, pepper, and grated nutmeg in a large bowl.
  5. 5. Layer half of the potato slices in the baking dish. Distribute the white onion rings on top. Pour half of the cream mixture over it.
  6. 6. Layer the remaining potatoes and green onion tips on top. Pour the remaining cream mixture over it.
  7. 7. Sprinkle the gratin with the grated Gouda cheese. Cover the dish with aluminum foil.
  8. 8. Bake the gratin in the oven for 45 minutes.
  9. 9. Remove the aluminum foil and bake for another 15 minutes, until the surface is golden brown and bubbling.
  10. 10. Let the dish rest for 10 minutes before serving to allow it to set slightly.
