  2. 2. Peel the potatoes and slice them very thinly (approx. 2-3 mm thick).
  3. 3. Wash the spring onions, slice them into fine rings, and separate the white parts from the green parts.
  4. 4. Cut the butter into cubes and use it to grease a baking dish.
  5. 5. Mix the cream with salt, pepper, and nutmeg in a bowl.
  6. 6. Place a layer of potato slices in the dish, sprinkle with a portion of the white onion rings.
  7. 7. Repeat the layers until the potatoes and onions are used up. Ensure the top layer consists of potatoes.
  8. 8. Pour the cream mixture evenly over the potatoes.
  9. 9. Sprinkle the top of the gratin with the grated cheese.
  10. 10. Bake the gratin for 45 to 55 minutes until the potatoes are tender and the surface is bubbling and golden brown.
  11. 11. Add the green onion rings only after baking.
  12. 12. Let the gratin rest for 5 minutes before serving.
