🥣 Creamy Spinach and Leek Soup with Roasted Sesame

Ingredients
- 2 Stk Leek (white part)
- 300 g Fresh spinach
- 500 ml Vegetable broth
- 100 g Crème fraîche or sour cream
- 20 g Butter
- 20 g Sesame seeds
Instructions
- 1. Wash the leeks thoroughly to remove sand and slice them into thin rings.
- 2. Sauté the leeks in the butter in a pot over medium heat for 5 minutes until softened.
- 3. Add the vegetable broth and bring the mixture to a boil.
- 4. Reduce the heat and let the soup simmer for 10 minutes.
- 5. Stir in the fresh spinach and let it wilt for 2 minutes.
- 6. Remove the pot from the heat and stir in the crème fraîche.
- 7. Toast the sesame seeds in a dry pan until golden brown and sprinkle them over the soup.
- 8. Serve the soup warm.
