  1. 1. Preheat the oven to 180 degrees Celsius (convection).
  2. 2. Wash the carrots and parsnips, peel them, and slice them thinly (about 3 mm thick).
  3. 3. Finely chop the onions and sauté them in butter in a pan until translucent.
  4. 4. Stir the cream, nutmeg, salt, and pepper into the onions. Remove the pan from the heat.
  5. 5. Layer the vegetable slices into a greased baking dish. Pour the onion cream mixture over them.
  6. 6. Sprinkle the grated cheese and thyme leaves over the gratin.
  7. 7. Bake the gratin for 40 minutes in the oven until the vegetables are tender and the surface is golden brown.
