1. Cut the pumpkin into thick slices. Boil them in plenty of salted water for 5 minutes (this is called blanching, meaning cooking briefly in boiling water). Remove them, rinse with cold water, and let them drain well.
2. Cut the pumpkin slices into bite-sized pieces. Heat olive oil in a pan and fry the pumpkin in batches for 5 minutes until translucent.
3. Preheat the oven to 200 degrees. Mash the cheese with a fork and whisk it together with milk, cream, eggs, salt, and pepper.
4. Peel the garlic and rub it over a baking dish (or 4 smaller dishes). Place the pumpkin inside and pour the egg-milk mixture over it. Bake the gratin for 30 minutes in the oven until golden brown on top.
