🍝 Creamy Pesto-Lemon Pasta with Arugula

Ingredients
- 300 g Penne Pasta
- 80 g Basil pesto (jar)
- 100 g Cream cheese (soft or hard cheese type)
- 1 Esslöffel Fresh lemon juice
- 1 Teelöffel Lemon zest (grated)
- 50 g Arugula
- 30 g Parmesan (grated)
- 1 Prline Salt
Instructions
- 1. Bring a large pot of salted water to a boil and cook the pasta al dente (according to package instructions, approx. 9-11 minutes).
- 2. Reserve half a cup of pasta water before draining the pasta.
- 3. In a large bowl, whisk the pesto, cream cheese, lemon juice, and lemon zest until smooth.
- 4. Add the drained pasta to the bowl with the sauce and mix well. Add a little pasta water as needed to keep the sauce creamy.
- 5. Set aside the arugula and parmesan for serving.
- 6. Serve the pasta on plates, top with arugula and sprinkle with parmesan.
