  1. 1. Sauté the mushrooms in the butter in a large frying pan over medium heat until golden brown. Remove the mushrooms from the pan and set them aside.
  2. 2. Boil the penne in a large pot of salted water until al dente. Save half a cup (120 ml) of the pasta water.
  3. 3. Sauté the finely chopped garlic in the same pan for one minute until fragrant.
  4. 4. Pour the cream into the pan and bring to a gentle simmer. Stir in the grated Parmesan until melted.
  5. 5. Add the mushrooms and drained pasta to the pan. Toss everything well and thin the sauce if necessary with the reserved pasta water.
  6. 6. Season with salt and pepper. Sprinkle the chopped parsley over the top and serve the dish immediately.
