🍮 Juicy Panna Cotta with Berry Syrup

Ingredients
- 500 ml Cream (30% fat)
- 100 ml Buttermilk
- 70 g Sugar
- 8 g Gelatine leaves
- 1 TL Vanilla extract
- 200 g Mixed berries (fresh or frozen)
- 20 g Sugar for syrup
- 40 ml Water
Instructions
- 1. Place the gelatine leaves in a bowl of cold water and let them soak for 5 minutes.
- 2. Heat the cream, buttermilk, and sugar in a pot over medium heat. Stir until the sugar is completely dissolved. Do not boil the mixture.
- 3. Remove the pot from the heat. Gently squeeze the soaked gelatine and stir it into the warm milk mixture until it dissolves.
- 4. Stir in the vanilla extract. Distribute the liquid evenly into 4 small molds or glasses.
- 5. Place the molds in the refrigerator for at least 4 hours until the panna cotta is firm.
- 6. Combine the berries and sugar for the syrup in a small pot. Heat over medium heat until the berries are soft and a juice forms (approx. 5 minutes).
- 7. Unmold the panna cotta onto plates and pour the cold berry syrup over it.
