🍲 Creamy Onion Soup with Crispy Croutons

Ingredients
- 600 g Onions (sliced into thin strips)
- 40 g Butter
- 1000 ml Beef stock (or vegetable paste dissolved)
- 100 ml Dry white wine
- 20 g All-purpose flour
- 150 g Gouda cheese (grated)
- 200 g Baguette (sliced)
- 5 g Salt
- 2 g Black pepper (ground)
- 3 g Thyme (dried)
Instructions
- 1. Melt the butter in a large pot over medium heat.
- 2. Add the onions and cook slowly for 15 minutes until soft and golden brown.
- 3. Sprinkle the flour over the onions and stir for 1 minute.
- 4. Deglaze with the white wine and stir until the liquid has reduced slightly.
- 5. Add the beef stock and thyme. Bring the soup to a boil and then simmer on low heat for 20 minutes.
- 6. Season the soup with salt and pepper to taste.
- 7. Place the baguette slices on two oven-safe soup bowls and sprinkle the grated cheese over them.
- 8. Pour the hot soup over the croutons and place the bowls under the grill for 5-10 minutes until the cheese melts and bubbles.
