  2. 2. Add the onions and cook slowly for 15 minutes until soft and golden brown.
  3. 3. Sprinkle the flour over the onions and stir for 1 minute.
  4. 4. Deglaze with the white wine and stir until the liquid has reduced slightly.
  5. 5. Add the beef stock and thyme. Bring the soup to a boil and then simmer on low heat for 20 minutes.
  6. 6. Season the soup with salt and pepper to taste.
  7. 7. Place the baguette slices on two oven-safe soup bowls and sprinkle the grated cheese over them.
  8. 8. Pour the hot soup over the croutons and place the bowls under the grill for 5-10 minutes until the cheese melts and bubbles.
