  1. 1. Preheat the oven to 180 degrees Celsius. Grease a baking dish (approx. 20x30 cm) with the butter.
  2. 2. Peel the potatoes and slice them into very thin rounds (approx. 2-3 mm thick).
  3. 3. In a large bowl, mix the cream, mustard, salt, and pepper.
  4. 4. Place a layer of potato slices in the baking dish. Repeat until all potatoes are used. Pour the cream mixture evenly over the top.
  5. 5. Sprinkle the top layer with the grated cheese and thyme leaves.
  6. 6. Cover the dish with aluminum foil and bake for 45 minutes.
  7. 7. Remove the foil and bake for another 20 minutes until the surface is golden brown and the potatoes are tender.
