  3. 3. Heat butter and olive oil in a Dutch oven. Sear meat pieces well on all sides.

  5. 5. Stir in mustard and thyme, roast briefly.
  6. 6. Deglaze with chicken broth and cream. Bring to a boil.
  7. 7. Cover, reduce heat, and simmer on low for 60 minutes until meat is tender.
  8. 8. Adjust sauce seasoning if necessary and serve.
