Ingredients
- 800 g Pork loin chops
- 150 ml Dry white wine
- 200 ml Heavy cream
- 3 EL Coarse grain mustard
- 30 g Butter
- 1 TL Salt
- 1/2 TL Black pepper
Instructions
- 1. Pat the chops dry with kitchen paper. Season them generously with salt and pepper on both sides.
- 2. Heat a large skillet over medium-high heat. Place the chops in the pan and sear for 3-4 minutes per side until golden brown. Remove them from the pan and set aside.
- 3. Pour out any excess fat from the pan. Add the butter and let it melt. Stir in the mustard until it combines with the butter.
- 4. Deglaze with the white wine and scrape up the browned bits from the bottom of the pan with a wooden spoon. Let the liquid reduce for 2 minutes.
- 5. Stir in the cream and let the sauce simmer for 3 minutes until slightly thickened. Return the chops to the pan.
- 6. Let the chops cook in the sauce for another 4-5 minutes until cooked through (internal temperature 145°F / 63°C). Serve immediately.
