  1. 1. Pat the chops dry with kitchen paper. Season them generously with salt and pepper on both sides.
  2. 2. Heat a large skillet over medium-high heat. Place the chops in the pan and sear for 3-4 minutes per side until golden brown. Remove them from the pan and set aside.
  3. 3. Pour out any excess fat from the pan. Add the butter and let it melt. Stir in the mustard until it combines with the butter.
  4. 4. Deglaze with the white wine and scrape up the browned bits from the bottom of the pan with a wooden spoon. Let the liquid reduce for 2 minutes.
  5. 5. Stir in the cream and let the sauce simmer for 3 minutes until slightly thickened. Return the chops to the pan.
  6. 6. Let the chops cook in the sauce for another 4-5 minutes until cooked through (internal temperature 145°F / 63°C). Serve immediately.
