  1. 1. Preheat the oven to 180 degrees Celsius (conventional heat).
  2. 2. Peel the potatoes and slice them into approx. 5 mm thick rounds.
  3. 3. Finely dice the onions and sweat them in the butter until translucent.
  4. 4. Remove the pan from the heat and stir in the crème fraîche, mustard, and vinegar.
  5. 5. Cut the chicken into approx. 2 cm cubes and season with salt and pepper.
  6. 6. Spread a layer of potato slices in a baking dish, add half the chicken and sauce. Repeat.
  7. 7. Sprinkle the top layer with the Parmesan.
  8. 8. Bake the gratin for 40 minutes in the oven until the potatoes are tender and the top is golden brown.
