  1. 1. Heat the vegetable broth in a pot and keep it hot.
  2. 2. Dice the onions very finely. Heat 20 g of butter in a heavy pot and sauté the onions for 5 minutes until translucent, without letting them turn brown.
  3. 3. Add the rice to the pot and stir for 2 minutes so that the grains are coated with butter and onion mass.
  4. 4. Deglaze the rice with the white wine. Stir continuously until the alcohol has evaporated (approx. 2 minutes).
  5. 5. Dissolve the saffron in a ladle of hot broth. Add the broth (ladle by ladle) to the rice. Stir constantly until the liquid is absorbed before adding the next ladle.
  6. 6. Remove from heat. Stir in the remaining 20 g of butter and the Parmesan. Cover and let rest for 2 minutes.
