🍲 Creamy Risotto alla Milanese for Beginners

Ingredients
- 320 g Risotto rice (Arborio)
- 1 l Vegetable broth (hot)
- 2 Stück Onions (finely diced)
- 40 g Butter
- 120 ml White wine
- 1 Prise Saffron threads
- 60 g Parmesan (grated)
Instructions
- 1. Heat the vegetable broth in a pot and keep it hot.
- 2. Dice the onions very finely. Heat 20 g of butter in a heavy pot and sauté the onions for 5 minutes until translucent, without letting them turn brown.
- 3. Add the rice to the pot and stir for 2 minutes so that the grains are coated with butter and onion mass.
- 4. Deglaze the rice with the white wine. Stir continuously until the alcohol has evaporated (approx. 2 minutes).
- 5. Dissolve the saffron in a ladle of hot broth. Add the broth (ladle by ladle) to the rice. Stir constantly until the liquid is absorbed before adding the next ladle.
- 6. Remove from heat. Stir in the remaining 20 g of butter and the Parmesan. Cover and let rest for 2 minutes.
