  2. 2. Add the red lentils and turmeric and stir briefly.
  3. 3. Pour in the tomatoes and vegetable broth. Let the mixture simmer for 15 minutes until the lentils are soft.
  4. 4. Stir in the coconut milk and let it warm up for 2 minutes.
  5. 5. Remove the pot from the heat and stir in the fresh spinach until it wilts.
  6. 6. Season with salt and portion the stew into four containers for the meal prep.
