🍲 Creamy Lentil Spinach Stew

Ingredients
- 250 g Red lentils
- 200 g Fresh spinach
- 150 g Onion
- 3 Stück Garlic cloves
- 400 g Tomatoes (can)
- 500 ml Vegetable broth
- 100 ml Coconut milk
- 5 g Turmeric
- 5 g Salt
Instructions
- 1. Finely chop the onion and press the garlic. Fry both in a pot for 2 minutes.
- 2. Add the red lentils and turmeric and stir briefly.
- 3. Pour in the tomatoes and vegetable broth. Let the mixture simmer for 15 minutes until the lentils are soft.
- 4. Stir in the coconut milk and let it warm up for 2 minutes.
- 5. Remove the pot from the heat and stir in the fresh spinach until it wilts.
- 6. Season with salt and portion the stew into four containers for the meal prep.
