  2. 2. Wash the leek thoroughly, pat it dry, and slice it into thin rings.
  3. 3. Heat olive oil in a pan and fry the bacon until crispy.
  4. 4. Add the leek to the pan and simmer until soft for 5 minutes.
  5. 5. Let the leek and bacon mixture cool down.
  6. 6. Stir goat cheese, yogurt, and eggs in a bowl until smooth.
  7. 7. Roll out the puff pastry on a floured surface and place it in a tart pan.
  8. 8. Pour the quiche filling into the pastry crust and distribute the leek-bacon mixture on top.
  9. 9. Bake the tart for 30-35 minutes until golden brown.
