🍲 Creamy Harissa Chickpea Soup

Ingredients
- 2 Stück Onions
- 3 Stück Garlic cloves
- 2 Stück Carrots
- 1 Dose (400 g) Chickpeas (can)
- 1 Dose (400 g) Tomatoes (can)
- 500 ml Vegetable broth
- 2 EL Harissa paste
- 100 ml Coconut milk (can)
- 1 EL Lemon juice
- 1 EL Olive oil
Instructions
- 1. Chop the onions, garlic, and carrots into small cubes.
- 2. Heat the olive oil in a large pot and sauté the vegetables for 5 minutes until soft.
- 3. Stir in the harissa paste and cook for 1 minute until fragrant.
- 4. Add the drained chickpeas, diced tomatoes, and vegetable broth to the pot.
- 5. Let the soup simmer for 15 minutes until the carrots are tender.
- 6. Blend the soup finely with a hand blender, but leave some chickpeas for texture.
- 7. Stir in the coconut milk and lemon juice, and season with salt and pepper.
