🌽 Creamy Corn and Garlic Soup with Fried Onions

Ingredients
- 400 g Corn kernels (canned)
- 2 Stk. Onions (large)
- 4 Stk. Garlic cloves
- 500 ml Vegetable broth
- 150 ml Heavy cream
- 30 g Butter
- 2 EL Olive oil
Instructions
- 1. Dice the onions finely and crush the garlic.
- 2. Heat the olive oil and butter in a pot. Fry the onions for 5 minutes until translucent.
- 3. Add the garlic and fry for 1 minute until fragrant.
- 4. Add the corn kernels and vegetable broth to the pot. Bring everything to a boil.
- 5. Let the soup simmer for 10 minutes until the corn is soft.
- 6. Puree the soup completely smooth with a hand blender.
- 7. Stir in the cream and warm the soup gently without boiling.
- 8. Serve the soup in deep bowls.
