  1. 1. Peel the potatoes and cut them into small cubes. Peel the onions and chop them finely.
  2. 2. Heat the butter in a large pot. Sauté the onions over medium heat for 5 minutes until translucent and soft.
  3. 3. Add the potato cubes and chestnuts to the pot. Stir to coat everything with butter.
  4. 4. Pour in the vegetable broth. Add the thyme sprigs. Bring the soup to a boil.
  5. 5. Reduce the heat, cover the pot, and let the soup simmer for 15 minutes until the potatoes are tender.
  6. 6. Remove the thyme sprigs. Puree the soup with a hand blender until smooth.
  7. 7. Stir in the cream. Season with salt and pepper. Serve the soup hot.
