🥬 Creamy Spinach and Bean Pasta

Ingredients
- 250 g Pasta (e.g., Penne)
- 2 TL Dried herbs (Italian seasoning)
- 3 Stück Garlic (finely chopped)
- 400 g Chickpeas (canned, drained)
- 150 g Fresh spinach
- 40 g Parmesan (grated)
- 30 ml Olive oil
Instructions
- 1. Sauté the garlic and dried herbs for 1 minute in the olive oil in a large pan over medium heat.
- 2. Add the drained chickpeas and cook for another 2 minutes until lightly golden brown.
- 3. Cook the pasta in a large pot of salted water according to package instructions until al dente. Reserve 100 ml of the pasta water before draining.
- 4. Add the fresh spinach to the pan with the chickpeas and stir until wilted (about 1 minute).
- 5. Add the drained pasta and 50 ml of the reserved pasta water to the pan. Stir vigorously to create a creamy sauce.
- 6. Remove the pan from the heat and mix in the grated Parmesan. Season to taste with salt and pepper. Serve warm.
