🍲 Creamy Beet and Leek Soup

Ingredients
- 400 g beets (pre-cooked)
- 200 g leek (white and green parts)
- 1 Stk onion
- 20 g butter
- 500 ml vegetable broth
- 100 ml heavy cream
- 5 g salt
- 2 g pepper
Instructions
- 1. Wash the leek thoroughly, slice it into rings, and dice the onion.
- 2. Melt the butter in a pot and sauté the leek and onion for 5 minutes until translucent.
- 3. Add the diced beets and vegetable broth. Bring everything to a boil.
- 4. Let the soup simmer for 10 minutes until the beets are tender.
- 5. Remove the pot from the heat and blend the soup smoothly with a hand blender.
- 6. Stir in the cream, season with salt and pepper, and serve warm.
