🥗 Mediterranean Couscous Bowl with Zucchini and Feta

Ingredients
- 250 g Hirse-Couscous
- 200 g Zucchini
- 200 g Cherry tomatoes
- 150 g Feta cheese (diced)
- 30 ml Olive oil
- 20 g Basil (fresh)
- 5 g Salt
- 2 g Black pepper
Instructions
- 1. Wash the zucchini and cut it into small cubes.
- 2. Wash the cherry tomatoes and halve them.
- 3. Fry the zucchini cubes in 15 ml olive oil in a pan over medium heat until golden brown.
- 4. Bring 500 ml water to a boil in a pot and dissolve 5 g salt.
- 5. Remove the pot from the heat, add the couscous, stir and immediately cover. Wait 5 minutes.
- 6. Fluff the couscous with a fork.
- 7. Combine the couscous, zucchini, tomatoes and feta in a large bowl.
- 8. Drizzle the remaining olive oil over it, chop the basil roughly and mix everything with salt and pepper.
