  1. 1. Wash the rice and cook it in salted water al dente (still firm to the bite). Drain it.
  2. 2. Cut the chicken into evenly sized cubes. Fry them in olive oil over medium heat until golden brown.
  3. 3. Deglaze the meat with the white wine and let the liquid reduce almost completely.
  4. 4. Wash the green beans and boil them in salted water for 5 minutes.
  5. 5. Whisk the mustard, the juice of half the lemon, and 1 tbsp olive oil to make a vinaigrette (sauce).
  6. 6. Cut the chives into small rings.
  7. 7. Mix rice, chicken, and beans in a large bowl. Add the vinaigrette and chives and mix everything well.
