  1. 1. Pat chicken thighs dry with paper towel. Season with salt and pepper.
  2. 2. Render bacon in a large pan over medium heat. Remove and set aside.
  3. 3. Brown chicken thighs in the same fat on all sides. Remove.
  4. 4. Chop onions and carrots roughly. Fry in the pan with a bit of oil until lightly caramelized.
  5. 5. Add mushrooms and continue frying until they change color.
  6. 6. Add tomato paste and glaze paste (or sugar and onion powder) and stir for 1 minute.
  7. 7. Deglaze with red wine and cook for 2 minutes until alcohol has evaporated.
  8. 8. Return chicken broth, chicken, and bacon to the pan. Cover and simmer on low heat for 45 minutes.
  9. 9. Stir in butter until melted and the sauce thickens. Season with salt and pepper.
  10. 10. Serve with horseradish cream.
