🍗 Chicken Thighs in Bistro-style Red Wine Sauce

Ingredients
- 800 g Chicken thighs (bone-in)
- 150 g Bacon cubes
- 200 g Mushrooms
- 2 Stück Onions
- 2 Stück Carrots
- 200 ml Dry red wine
- 150 ml Chicken broth
- 1 EL Tomato paste
- 1 EL Glaze paste (or 1 tsp sugar + 1 tsp onion powder)
- 30 g Butter
- 100 ml Horseradish cream
- nach Belieben Salt and pepper
- 2 EL Olive oil
Instructions
- 1. Pat chicken thighs dry with paper towel. Season with salt and pepper.
- 2. Render bacon in a large pan over medium heat. Remove and set aside.
- 3. Brown chicken thighs in the same fat on all sides. Remove.
- 4. Chop onions and carrots roughly. Fry in the pan with a bit of oil until lightly caramelized.
- 5. Add mushrooms and continue frying until they change color.
- 6. Add tomato paste and glaze paste (or sugar and onion powder) and stir for 1 minute.
- 7. Deglaze with red wine and cook for 2 minutes until alcohol has evaporated.
- 8. Return chicken broth, chicken, and bacon to the pan. Cover and simmer on low heat for 45 minutes.
- 9. Stir in butter until melted and the sauce thickens. Season with salt and pepper.
- 10. Serve with horseradish cream.
