🍗 Simple Coq au Vin (Chicken in Red Wine)

Ingredients
- 800 g Chicken thighs
- 500 ml Dry red wine
- 150 g Bacon cubes
- 200 g Onions (quartered)
- 200 g Mushrooms
- 150 g Carrots (sliced)
- 4 Garlic cloves
- 2 EL Tomato paste
- 100 ml Chicken broth
- 30 g Butter
- 2 EL Flour
- 1 TL Salt
- 1/2 TL Black pepper
- 4 Fresh thyme sprigs
Instructions
- 1. Pat chicken thighs dry and season with salt and pepper.
- 2. Fry bacon cubes in a large pot until crispy over medium heat. Remove and set aside.
- 3. Sear chicken pieces in the same pot until the skin is golden brown. Remove.
- 4. Cook onions, carrots, and garlic in the fat for about 5 minutes.
- 5. Add tomato paste and flour and roast for 1 minute while stirring.
- 6. Deglaze with red wine and chicken broth. Add seasoning and thyme.
- 7. Return chicken and bacon to the pot. Cover and simmer on low heat for 45 minutes.
- 8. Fry mushrooms until golden brown and add them towards the end of cooking.
- 9. Season sauce with more salt if needed. Serve hot.
