  1. 1. Pat chicken thighs dry and season with salt and pepper.
  2. 2. Fry bacon cubes in a large pot until crispy over medium heat. Remove and set aside.
  3. 3. Sear chicken pieces in the same pot until the skin is golden brown. Remove.
  4. 4. Cook onions, carrots, and garlic in the fat for about 5 minutes.
  5. 5. Add tomato paste and flour and roast for 1 minute while stirring.
  6. 6. Deglaze with red wine and chicken broth. Add seasoning and thyme.
  7. 7. Return chicken and bacon to the pot. Cover and simmer on low heat for 45 minutes.
  8. 8. Fry mushrooms until golden brown and add them towards the end of cooking.
  9. 9. Season sauce with more salt if needed. Serve hot.
