🍗 Bistro Chicken in Red Wine Sauce

Ingredients
- 800 g Chicken thighs
- 150 g Bacon cubes
- 2 Stück Onions
- 3 Stück Carrots
- 250 g Mushrooms
- 250 ml Dry red wine
- 100 ml Chicken broth
- 1 EL Tomato paste
- 20 g Butter
- 1 EL Flour
- nach Bedarf Salt and pepper
Instructions
- 1. Pat chicken thighs dry and season generously with salt and pepper.
- 2. Fry bacon cubes in a large pot over medium heat until golden brown. Remove and set aside.
- 3. Sear chicken thighs in the same pot in batches until golden brown. Remove.
- 4. Sauté roughly chopped onions and carrots in the fat for 5 minutes.
- 5. Stir in tomato paste and flour and roast for 1 minute to neutralize the raw taste.
- 6. Deglaze with red wine and let reduce slightly until the liquid is half as much.
- 7. Return chicken broth, chicken, and bacon to the pot. Cover lid and simmer over low heat for 30 minutes.
- 8. Sear mushrooms and butter in a frying pan and add to the chicken at the end of cooking time. Cook together for another 5 minutes.
- 9. Season sauce to taste and serve.
