  1. 1. Pat chicken thighs dry and season generously with salt and pepper.
  2. 2. Fry bacon cubes in a large pot over medium heat until golden brown. Remove and set aside.
  3. 3. Sear chicken thighs in the same pot in batches until golden brown. Remove.
  4. 4. Sauté roughly chopped onions and carrots in the fat for 5 minutes.
  5. 5. Stir in tomato paste and flour and roast for 1 minute to neutralize the raw taste.
  6. 6. Deglaze with red wine and let reduce slightly until the liquid is half as much.
  7. 7. Return chicken broth, chicken, and bacon to the pot. Cover lid and simmer over low heat for 30 minutes.
  8. 8. Sear mushrooms and butter in a frying pan and add to the chicken at the end of cooking time. Cook together for another 5 minutes.
  9. 9. Season sauce to taste and serve.
