  1. 1. Peel the potatoes and boil them in salted water until tender (approx. 15-20 min).
  2. 2. Place the boiled potatoes in a pot and add the butter and warm milk.
  3. 3. Mash the potatoes into a smooth puree and season with salt and pepper.
  4. 4. Cut the chicken into bite-sized pieces.
  5. 5. Cut the mushrooms into quarters and finely chop the onion and garlic.
  6. 6. Fry the bacon in a large pan until crispy and remove it from the pan.
  7. 7. Fry the chicken in the same fat until golden brown and remove it.
  8. 8. Saute the onion and garlic in the fond, add the tomato paste and stir for 1 minute.
  9. 9. Return the chicken, bacon, mushrooms, wine, broth, and herb bundle to the pan.
  10. 10. Let the sauce simmer on low heat for 20 minutes until it thickens.
  11. 11. Remove the herb bundle from the sauce.
  12. 12. Place the mashed potatoes in the bowls and spoon the Coq au Vin sauce over it.
  13. 13. Serve the dish warm.
