  1. 1. Peel the potatoes and boil them in salted water for 20 minutes until soft. Press them through a potato ricer.
  2. 2. Cut the chicken breast into bite-sized cubes. Season them with salt and thyme.
  3. 3. Cut the bacon into small cubes and the mushrooms into quarters. Finely chop the onion.
  4. 4. Fry the bacon in a pot until crispy. Remove it and fry the chicken in the fat until golden brown.
  5. 5. Add the onions and mushrooms to the pot and sauté them for 5 minutes. Add the chicken back in.
  6. 6. Deglaze with the red wine and let it reduce for 5 minutes. Add the broth and let the dish simmer for 10 minutes.
  7. 7. Mix the butter with the flour into a dollop and stir it into the sauce to thicken it. Stir the bacon back in.
  8. 8. Mix the mashed potatoes with some salt. Portion the mashed potatoes into 4 containers and add the chicken mixture on top.
