🍗 Coq-au-Vin Bowl with Mashed Potatoes

Ingredients
- 600 g Chicken Breast
- 500 g Potatoes
- 200 g Mushrooms
- 100 g Bacon (Smoked)
- 150 g Onion
- 200 ml Red Wine (Dry)
- 100 ml Chicken Broth
- 30 g butter
- 10 g Flour
- 5 g Salt
- 2 g Thyme (Dried)
Instructions
- 1. Peel the potatoes and boil them in salted water for 20 minutes until soft. Press them through a potato ricer.
- 2. Cut the chicken breast into bite-sized cubes. Season them with salt and thyme.
- 3. Cut the bacon into small cubes and the mushrooms into quarters. Finely chop the onion.
- 4. Fry the bacon in a pot until crispy. Remove it and fry the chicken in the fat until golden brown.
- 5. Add the onions and mushrooms to the pot and sauté them for 5 minutes. Add the chicken back in.
- 6. Deglaze with the red wine and let it reduce for 5 minutes. Add the broth and let the dish simmer for 10 minutes.
- 7. Mix the butter with the flour into a dollop and stir it into the sauce to thicken it. Stir the bacon back in.
- 8. Mix the mashed potatoes with some salt. Portion the mashed potatoes into 4 containers and add the chicken mixture on top.
