1. Wash and peel the potatoes, carrots, parsnips, and beets. Cut everything into wedges or bite-sized pieces. (Wear gloves to keep your hands from getting stained.)
2. Place all the vegetables in a large bowl. Toss them with oil and season with salt and pepper. It is best to put the beets in a separate bowl so they do not stain the other vegetables.
3. Line a baking sheet with parchment paper. Spread the vegetables on it and bake at 200 °C (convection 180 °C, gas mark 3) on the middle rack for about 25 minutes.
4. Meanwhile, mix quark and yogurt in a bowl. Gently fold in the sparkling water and stir in the herbs.
5. Squeeze the lemon. Season the herb quark with salt, pepper, sugar, and lemon juice. Place the vegetables on a plate and serve with the quark.
