🥘 Mountain Cocido with Chickpeas and Leek

Ingredients
- 300 g Chicken breast (diced)
- 150 g Dried chickpeas (soaked)
- 1 große Leek
- 1 große Carrot (diced)
- 5 g Paprika powder (sweet)
- 15 ml Medium oil blend
- 1 L Vegetable broth
- 4 g Salt
- 10 g Fresh parsley (chopped)
Instructions
- 1. Cut the leek into rings and the carrot into small cubes.
- 2. Heat the oil in a pot and fry the chicken until golden brown.
- 3. Add the leek and carrot and sauté for 3 minutes.
- 4. Stir in the paprika powder and pour in the vegetable broth.
- 5. Add the chickpeas and bring the soup to a boil.
- 6. Reduce the heat and let the stew simmer on low heat for 60 minutes.
- 7. Season with salt and parsley and serve hot.
