🥘 Asparagus and Beef Stew

Ingredients
- 500 g Beef roast (cubed)
- 300 g Green asparagus
- 300 g Potatoes
- 1 große Onion
- 2 Garlic cloves
- 1 TL Paprika powder (sweet)
- 500 ml Beef stock
- 2 EL Olive oil
- 1 TL Salt
- 1 Bund Parsley (fresh)
Instructions
- 1. Wash the asparagus. Cut off the woody bottom ends and cut the stalks into 3 cm long pieces.
- 2. Peel the potatoes and cut them into large cubes. Finely chop the onion and garlic.
- 3. Heat the olive oil in a large casserole dish. Brown the beef on all sides. Remove the meat from the pot.
- 4. Sauté the onion and garlic in the same pot for 2 minutes.
- 5. Stir in the paprika powder and deglaze with a splash of stock. Add the remaining stock, potatoes, and meat back in.
- 6. Let the stew simmer on low heat for 20 minutes.
- 7. Add the asparagus pieces. Cook for another 10 minutes until the asparagus is tender-crisp and potatoes are soft.
- 8. Season with salt. Chop the parsley and sprinkle it on top. Serve the stew.
