  1. 1. Wash the asparagus. Cut off the woody bottom ends and cut the stalks into 3 cm long pieces.
  2. 2. Peel the potatoes and cut them into large cubes. Finely chop the onion and garlic.
  3. 3. Heat the olive oil in a large casserole dish. Brown the beef on all sides. Remove the meat from the pot.
  4. 4. Sauté the onion and garlic in the same pot for 2 minutes.
  5. 5. Stir in the paprika powder and deglaze with a splash of stock. Add the remaining stock, potatoes, and meat back in.
  6. 6. Let the stew simmer on low heat for 20 minutes.
  7. 7. Add the asparagus pieces. Cook for another 10 minutes until the asparagus is tender-crisp and potatoes are soft.
  8. 8. Season with salt. Chop the parsley and sprinkle it on top. Serve the stew.
