🍲 Classic French Egg Drop Soup with Herbs

Ingredients
- 750 ml Chicken broth
- 3 Stk Eggs (M)
- 3 Stk Spring onions
- 1 EL Soy sauce
- 1 TL Sesame oil
- 1 TL Cornstarch
- 1 EL Water (for starch)
Instructions
- 1. Wash the spring onions. Cut the white parts into small rings and chop the green parts roughly.
- 2. Pour the chicken broth into a pot. Bring it to a boil, then reduce the heat to low.
- 3. Whisk the cornstarch with the cold water in a small bowl until a smooth paste forms.
- 4. Pour the starch mixture into the boiling broth. Stir slowly to thicken the soup slightly.
- 5. Lightly beat the eggs in a separate bowl. Pour them slowly in a thin stream into the soup while stirring with a spoon.
- 6. Turn off the heat. Add the soy sauce and sesame oil. Stir in the white onion rings.
- 7. Serve the soup in deep bowls. Garnish with the green onions.
