1. Separate three eggs. Whip the egg whites in a bowl with 240 g powdered sugar for about 3–4 minutes. The egg yolks can be used for other purposes. In a separate bowl, mix almonds, cinnamon, and honey.
2. Fold the whipped egg whites into the mixture and knead everything into a dough. Roll out the dough on a floured work surface to about 1 cm thickness and cut out stars. Place these on a baking sheet lined with baking paper.
3. Separate the remaining egg and whip the egg white with 80 g powdered sugar until a syrupy consistency is reached. Brush the cut-out stars generously with this and bake in a preheated oven at 150 °C for about 12 minutes.
4. Remove the cinnamon stars as soon as the glaze is set, while the dough is still slightly soft. Let cool and enjoy. Bon appétit!
