  1. 1. Bring the water and a pinch of salt to a boil in a pot.
  2. 2. Remove the pot from the heat. Immediately add the flour and stir vigorously with a wooden spoon until the dough pulls away from the sides and forms a ball.
  3. 3. Let the dough cool until it is lukewarm.
  4. 4. Fill the dough into a piping bag fitted with a large star nozzle.
  5. 5. Heat the oil in a pot to 180 degrees Celsius (Test it: A small dough piece should bubble).
  6. 6. Pipe long, evenly thick churro sticks directly into the hot oil. Fry them for 3-4 minutes until golden brown.
  7. 7. Remove the churros and immediately roll them in sugar.
