🥦 Roasted Cauliflower Salad with Lemon Dressing

Ingredients
- 600 g Cauliflower (whole head)
- 200 g Chickpeas (can, drained)
- 1 Stk Lemon
- 30 ml Olive oil
- 1 Stk Garlic clove
- 5 g Paprika powder (sweet)
- 4 g Salt
- 10 g Parsley (fresh)
Instructions
- 1. Preheat the oven to 200 degrees Celsius. Cut the cauliflower into small florets.
- 2. Mix the cauliflower with half of the olive oil, the paprika powder, and half of the salt. Spread it on a baking sheet.
- 3. Roast the cauliflower in the oven for 20 minutes until golden brown.
- 4. Squeeze the juice of the lemon and mix it with the remaining olive oil, the pressed garlic, and the remaining salt.
- 5. Add the drained chickpeas and the roasted cauliflower to a bowl. Add the dressing and mix. Sprinkle the chopped parsley over it.
