🥦 Crispy Cauliflower with Spicy Yogurt Dip

Ingredients
- 1 Kopf (ca. 600 g) Cauliflower
- 30 ml Olive oil
- 5 g Paprika powder (sweet)
- 2 g Cumin (ground)
- 150 g Yogurt (plant-based, coconut or soy)
- 15 ml Lemon (juice)
- 1 Zehe Garlic (fresh, minced)
- 1 g Salt
- 10 g Parsley (fresh, chopped)
Instructions
- 1. Preheat the oven to 200 degrees Celsius. Wash the cauliflower and cut it into small florets.
- 2. In a large bowl, mix the olive oil, paprika powder, cumin, salt, and pepper.
- 3. Add the cauliflower florets to the bowl and toss well so they are evenly coated with seasoning.
- 4. Place the cauliflower on a baking sheet lined with parchment paper. Bake for 20 minutes until crispy and golden brown.
- 5. Meanwhile, mix the yogurt with the lemon juice, garlic, and a pinch of salt for the dip.
- 6. Sprinkle the hot cauliflower with the parsley. Serve it warm or at room temperature with the dip.
