1. Place dates, nuts, cocoa powder, oat flakes, and flaxseeds in a food processor or powerful blender and chop them roughly.
2. Chop 100 grams of chocolate and stir it together with hazelnut butter, apple puree, spelt flakes, amaranth, and spices into the date mixture.
3. Press the mixture firmly into a baking pan lined with parchment paper. Bake in a preheated oven at 200 degrees Celsius conventional heat (or 180 degrees Celsius fan/Gas Mark 3) for 20 to 25 minutes until the surface is browned. Let the bars cool in the pan.
4. Remove the bars from the pan and parchment paper, and cut them into 16 pieces. Melt the remaining chocolate, decorate the bars with it, and let them cool.
