  1. 1. Break the chocolate into small pieces and melt it gently in a double boiler.
  2. 2. Let the melted chocolate cool down slightly until it is lukewarm.
  3. 3. Separate the egg yolks from the egg whites.
  4. 4. Whisk the egg yolks into the lukewarm chocolate.
  5. 5. Whip the heavy cream until stiff, but not too firm.
  6. 6. Whip the egg whites with the sugar until stiff peaks form.
  7. 7. Gently fold the whipped cream into the chocolate mixture.
  8. 8. Gently fold in the egg whites until the mixture is airy.
  9. 9. Fill the mousse into four glasses and place them in the refrigerator for at least 2 hours.
