  1. 1. Break the chocolate into pieces and melt it using a double boiler or microwave. Let it cool slightly.
  2. 2. Pour approx. 200 ml of the cold cream into a large bowl.
  3. 3. Whip the cream until stiff peaks form. Stir in the sugar and vanilla.
  4. 4. Mix the remaining 300 ml of cold cream with the melted chocolate until a smooth mass forms.
  5. 5. Gently fold the stiffly whipped cream into the chocolate mixture with a spoon, without deflating it.
  6. 6. Fill the mousse into 4 serving cups and place them in the refrigerator for at least 2 hours to set.
