🍛 Chickpea Curry

Ingredients
- 400 chickpeas (canned)
- 1 onion
- 2 garlic cloves
- 1 ginger
- 400 coconut milk
- 2 curry powder
- 150 spinach
- 2 olive oil
- 150 rice
Instructions
- 1. Chop onion, garlic, and ginger and sauté in olive oil.
- 2. Rinse the chickpeas and add them. Sprinkle curry powder and mix well.
- 3. Add coconut milk and let the curry simmer for 20 minutes.
- 4. Add spinach just before serving and let it wilt.
- 5. Cook the rice according to package instructions and serve with the curry.
