Ingredients
- 300g Chicken thighs
- 1,5L Chicken broth
- 150g Rice noodles
- 1 Onion
- 1 Stück Ginger
- 1 Star anise
- 1 Bund Fresh mint
- 1 Lime
Instructions
- 1. Bring chicken thighs to a boil in water, then add broth.
- 2. Toast onion and ginger, then add to broth.
- 3. Add star anise and simmer for 45 minutes.
- 4. Cook rice noodles according to package instructions.
- 5. Strain broth and season to taste.
- 6. Place noodles in bowls, pour broth over, and garnish with mint and lime.
