4 chicken breast fillets (kitchen-ready, skinless, 160 g each)
salt
pepper (from the mill)
2 tbsp olive oil
1 tbsp liquid honey
3 tbsp balsamic vinegar
120 ml poultry broth
Instructions
1. Peel the onion and garlic. Cut the onion into wedges and finely chop the garlic. Wash the tomatoes, trim them, and pat dry. Rinse the basil, shake off excess water, and pluck the leaves.
2. Wash the chicken and pat dry. Make several shallow cuts into the meat. Stuff with basil leaves, season with salt and pepper, and brown on all sides in a hot pan with oil.
3. Add the onion and garlic, sauté briefly, then add the tomatoes, drizzle with honey, and deglaze with balsamic vinegar. Pour in the broth, reduce the heat, and simmer gently for about 5 minutes. Adjust seasoning to taste.
4. Plate the chicken breasts with the vegetables and serve drizzled with the sauce.
