🥧 Savory Cherry Tomato and Caramelized Onion Tart with Thyme

Ingredients
- 320 g Puff pastry (refrigerated)
- 400 g Cherry tomatoes
- 250 g Red onions
- 150 g Mozzarella (shredded)
- 125 g Cream cheese (full fat)
- 10 g Thyme (fresh)
- 15 ml Olive oil
- 5 g Salt
- 2 g Black pepper
Instructions
- 1. Preheat the oven to 200 degrees Celsius (convection).
- 2. Slice the red onions into thin strips and fry them in a pot with one tablespoon of olive oil over medium heat for 15 minutes until golden brown and soft. Lightly salt them.
- 3. Wash the cherry tomatoes and halve them. Pluck the thyme leaves from the stems.
- 4. Roll out the puff pastry on a floured work surface on a baking sheet into a rectangle that is slightly smaller than the sheet. Prick the edges several times with a fork to prevent rising.
- 5. Spread the cream cheese evenly over the pastry, leaving an approximately 2 centimeter wide border. Sprinkle half of the mozzarella over it.
- 6. Spread the caramelized onions over the cheese layer. Distribute the halved cherry tomatoes and fresh thyme leaves on top.
- 7. Put the remaining cream cheese in a small bowl, stir until smooth, and drizzle it over the tomatoes. Sprinkle with black pepper.
- 8. Bake the tart for 20 to 25 minutes until the pastry is golden brown and the cheese is bubbling.
- 9. Remove the tart from the oven, sprinkle with the remaining mozzarella, and let it rest for 5 minutes before cutting it into squares.
