  1. 1. Rinse the chicken breast fillet under running water.
  2. 2. Pat the meat dry with a kitchen towel.
  3. 3. Remove visible fat edges and sinews.
  4. 4. Bring the chicken broth to a boil in a pot.
  5. 5. Place the meat into the boiling broth.
  6. 6. Cook the meat for about 20 minutes until done.
  7. 7. Peel the carrots meanwhile.
  8. 8. Cut the carrots into small cubes.
  9. 9. Add the carrot cubes to the boiling broth.
  10. 10. Remove the cooked meat from the broth after 20 minutes.
  11. 11. Strain the broth with the carrots through a sieve.
  12. 12. Catch the broth in a separate container.
  13. 13. Melt the butter in a pot.
  14. 14. Stir the flour into the butter.
  15. 15. Remove the pot from the heat briefly.
  16. 16. Pour in the hot broth while whisking constantly with a whisk.
  17. 17. Place the pot back on the stove.
  18. 18. Bring the sauce to a boil.
  19. 19. Clean the mushrooms.
  20. 20. Quarter the mushrooms.
  21. 21. Add the mushrooms to the sauce along with the peas.
  22. 22. Heat everything well.
  23. 23. Dice the chicken breast.
  24. 24. Add the chicken cubes back to the sauce along with the carrots.
  25. 25. Season with curry, nutmeg, pepper, and salt to taste.
  26. 26. Serve the fricassee with rice or fill it into queen pastries.
