🍽️ Fluffy Ricotta Gnocchi

Ingredients
- 250 g Ricotta
- 180 g flour
- 40 g Parmesan
- 1 egg
- some salt and pepper
- flour (for dusting)
Instructions
- 1. Put all ingredients into a bowl and mix well. Knead the mixture into a soft dough. Roll the dough into finger-thick sausages and cut them into small pieces. Lightly coat the pieces in flour and place them on a kitchen towel dusted with flour.
- 2. If you like, you can give the gnocchi their traditional shape. Place a piece on the back of a fork or a ridged tool. Press with the back of a knife and roll slightly to create a groove. This looks great but requires a bit of practice.
- 3. Carefully lift the finished gnocchi with the kitchen towel into boiling salted water. Stir briefly to prevent sticking. Wait until they float to the surface – then they are done.
- 4. A simple tomato sauce is the perfect accompaniment.
