Ingredients
- 4 Vienna sausages (or Bockwurst)
- 2 snap sausages (e.g. Debrecener)
- 100 g bacon (lean)
- 1 large onion(s)
- 3 clove(s) of garlic
- 1 large bell pepper(s), red
- 2 beef tomato(es)
- 2 tbsp tomato paste
- 0.5 liter meat broth (or chicken broth)
- 200 g crème fraîche (or crème légère)
- 1 chili pepper(s)
- 1 tsp paprika powder, sweet
- 0.5 tsp thyme (dried)
- 1 small bay leaf
- 1 sprig(s) rosemary (approx. 5 cm)
- 0.25 tsp cumin powder (or caraway powder)
- salt and pepper (from the mill)
- 1 pinch(es) of sugar
- 3 tbsp oil
- 2 tbsp chive rings
- optional sauce thickener (dark)
Instructions
- 1. Slice the sausages into rounds about half a centimeter thick.
- 2. Peel the onion and cut it in half.
- 3. Slice the onion halves as well.
- 4. Cut the bacon into small cubes.
- 5. Wash the bell pepper and chili.
- 6. Remove the seeds from the bell pepper and chili.
- 7. Dice the bell pepper and chili.
- 8. Wash the tomatoes.
- 9. Dice the tomatoes.
- 10. Peel the garlic.
- 11. Chop the garlic finely.
- 12. Heat the oil in a pan.
- 13. Sauté the bacon cubes until they become translucent.
- 14. Add the sausages and onions.
- 15. Brown everything.
- 16. Stir in the tomato paste.
- 17. Roast the tomato paste briefly.
- 18. Add the remaining vegetables and garlic.
- 19. Sauté everything lightly for three to five minutes.
- 20. Deglaze the mixture with the broth and crème fraîche.
- 21. Bring it to a boil.
- 22. Add thyme, rosemary, and a bay leaf.
- 23. Simmer everything for about fifteen to twenty minutes over low heat.
- 24. Remove the rosemary sprig and the bay leaf.
- 25. Stir in the paprika powder and cumin.
- 26. Season with salt, pepper, and a pinch of sugar.
- 27. Let the sauce reduce a bit more.
- 28. Thicken the sauce with a sauce thickener if desired.
- 29. Fold in the chive rolls.
- 30. Let the dish rest for five minutes without heat.
- 31. Serve the goulash with noodles or rice.
