  1. 1. Beat the butter and sugar in a bowl until the mixture is light, creamy, and fluffy.
  2. 2. Stir the egg well into the butter-sugar mixture.
  3. 3. Mix the flour with the cornstarch (a fine starch for more lightness) and the baking powder in a separate bowl.
  4. 4. Gently fold the dry mixture into the batter and stir briefly until just combined.
  5. 5. Spread the finished batter into a greased springform pan with a diameter of 26 centimeters.
  6. 6. Halve the plums and remove the pits.
  7. 7. Place the halved and pitted plums in a circle on top of the batter.
  8. 8. Combine sugar, vanilla sugar, cold butter, flour, and cinnamon in a bowl.
  9. 9. Rub the ingredients together with your fingers to form crumbly streusel.
  10. 10. Distribute the streusel evenly over the plums.
  11. 11. Preheat the oven to 175°C conventional heat (convection: 155°C, gas: mark 2).
  12. 12. Place a heatproof cup filled with water in the oven if you are baking using convection.
  13. 13. Bake the cake on the middle rack for 40 to 45 minutes.
  14. 14. Remove the water cup 10 minutes before the end of the baking time so that the streusel becomes crispy.
  15. 15. Serve the cake especially delicious with whipped cream.
