🍰 Juicy Plum Crumble Cake

Ingredients
- 80 g butter (or margarine, softened)
- 80 g sugar
- 1 egg
- 100 g flour
- 50 g cornstarch
- 1 tsp baking powder
- 600 g plums (pitted, quartered)
- 100 g butter (or margarine, cold)
- 90 g sugar
- 1 packet vanilla sugar
- 1 pinch cinnamon (or more if desired)
- 150 g flour
- fat (for the pan)
Instructions
- 1. Beat the butter and sugar in a bowl until the mixture is light, creamy, and fluffy.
- 2. Stir the egg well into the butter-sugar mixture.
- 3. Mix the flour with the cornstarch (a fine starch for more lightness) and the baking powder in a separate bowl.
- 4. Gently fold the dry mixture into the batter and stir briefly until just combined.
- 5. Spread the finished batter into a greased springform pan with a diameter of 26 centimeters.
- 6. Halve the plums and remove the pits.
- 7. Place the halved and pitted plums in a circle on top of the batter.
- 8. Combine sugar, vanilla sugar, cold butter, flour, and cinnamon in a bowl.
- 9. Rub the ingredients together with your fingers to form crumbly streusel.
- 10. Distribute the streusel evenly over the plums.
- 11. Preheat the oven to 175°C conventional heat (convection: 155°C, gas: mark 2).
- 12. Place a heatproof cup filled with water in the oven if you are baking using convection.
- 13. Bake the cake on the middle rack for 40 to 45 minutes.
- 14. Remove the water cup 10 minutes before the end of the baking time so that the streusel becomes crispy.
- 15. Serve the cake especially delicious with whipped cream.
